Vintage Production area The grapes come exclusively from the vineyards on the Campo alla Sughera estate, which is located in the heart of the area with the “Bolgheri” designation of origin.
Grapes Sauvignon Blanc, Vermentino and Chardonnay.
Alcohol by volume 13%.
Harvest The grapes are harvested by hand in late August and early September, with 15 kg of fruit in each box. In order to preserve the aromas of the grape varieties, they are only harvested in the morning, when the temperature is coolest. Winemaking technique: The first grapes to be harvested are gently pressed. Cold racking-off of the must leaves it clear. It is then transferred to highly select French oak barriques, 60% of which are new and 40% are previously used. They are specifically for white grape varieties and are kept in a temperature-controlled room at 18-20°C, where primary fermentation and then malolactic fermentation take place. The Vermentino from the late harvest is pressed, racked off and left to ferment in steel tanks. After primary fermentation, malolactic fermentation is prevented.
Ageing The wine in both the barriques and the steel tanks is left to age on its fine lees for 6 months. In March in the year after the harvest, it is blended, bottled and aged in the bottle for 6 months.
Characteristics
Colour Bright straw yellow, with lovely green hues.
Aroma Expansive, with notes of peach, mint and mandarin together with biscuit and caramel sensations. Taste: Extremely balanced and harmonious, with very pleasant underlying acidity that softens the alcohol perfectly.
Serving temperature 12-13°C (take the wine out of the fridge roughly half an hour before serving it).
